    Prepare the Vegetables
    10 minutes

    Put plenty of water in a large bowl, add flour, lemon juice, and lemon peels, then mix. Peeled vegetables will wait in this water to prevent browning.

    Flour and lemon are used to preserve the color of the vegetables; do not use flour if you have an allergy.

    Chop Celery Root and Quince
    15 minutes

    Peel the celery roots and remove any blackened parts, then chop them into apple wedges along with some of their green tops. After peeling the quince, slice it.

    Depending on the size of the celery root, it can be four or two pieces. Keep them in the prepared water.

    Sauté Onions and Carrots
    8 minutes

    Put 4 tablespoons of olive oil in a wide pot, add finely chopped onion and carrot, and sauté for a few minutes.

    12 minutes

    Add orange juice and grated orange zest on top. Cook over medium heat for about 10 minutes; when the vegetables start to soften, add the celery root and quinces.

    Add enough hot water to cover, add salt and pepper, and close the lid. Cook over low heat until the vegetables are tender.

    Cook patiently over low heat, do not rush.

    After cooking, when it's no longer piping hot, add honey and a little more olive oil, then mix. Transfer to a serving plate after it cools down.

Although some of us don't like its smell, for me, celery root is the most favorite vegetable of winter.

We almost all cook this dish, whose flavor comes from Ottoman cuisine, with our own unique recipe. I prefer honey instead of sugar to sweeten my olive oil dishes. And to get more of that delicious olive oil aroma, I add it over the dish when it's lukewarm after cooking, just as I learned from my ceramics teacher once.

Secret
